“The Best Lemon Bar Ever!”

If you like dessert and you like Lemon’s you must try this recipe!

Crust:

1 cup butter or margarine

1/2 cup powdered sugar

1/2 teaspoon salt

2 cups flour, unsifted

Cream butter and powdered sugar.  Add salt and flour mix well.  Pat into 9″ x 13″ greased baking dish.  Bake at 350 for 15 to 29 minutes.

Filling:

4 eggs, slightly beaten

2 cups sugar

1/2 teaspoon baking powder

1/4 cup flour

1/4 cup lemon juice

Rind of 1 lemon, grated

To make filling, mix all ingredients and pour over hot crust.  Bake at 350 for 20 to 25 minutes .  When done, sprinkle with powdered sugar.  Cut when cool.  Yield:  One 9″ x 13″ cake.

Lemon is a fruit so it’s healthy!
