Coconut Chicken

 

I love trying new recipes!  I like mixing it up. I am not the type of person that can eat the same thing over and over again and be happy. We teied a new clean recipe (GF) last night in my air fryer (no oil) and it turned out so good I thought I would share it with you all! Bonus: only took 30 minutes to prepare!
 Crispy Coconut Chicken 

1/2 cup cornstarch

1/4 teaspoon salt

1/8 teaspoon pepper

1 tsp cayenne pepper {optional}

3 large eggs, lightly beaten

3 cups of unsweetened coconut flakes 

3-4 medium boneless, skinless, chicken breasts, cut into strips or nuggets (or, I used chicken tender loins)
 -Wash chicken and cut into large bite size pieces.

– Mix first four ingredients together in bowl

– Put beaten eggs in second bowl

– Put unsweetened coconut in third bowl

– Coat chicken in dry ingredients, dip in eggs, and cover in coconut. Place in air fryer basket in a single layer.

-Cook on 370 degrees for 18 minutes, flip and cook for another 5 minutes.
Serve with honey mustard dipping sauce or my families favorite, barbeque sauce!
