Breakfast for dinner is our favorite day of the week. I am not a big breakfast cooker or eater so very rarely do my kids have anything other then cereal, bagels or toast for breakfast. But we all love traditional breakfast items. Such as eggs, hash browns, waffles, pancakes, french toast, muffins and bacon. Oh, the bacon that my house consumes would astonish anyone!
I have chosen to make one of these items each week for dinner. It is always the favorite night of the week for all of us. It’s also easy on the hands, the stomach and the wallet.
My go to is eggs. Especially on a crazy busy night when I need something quick, easy and healthy. I have even found myself cooking them for lunch when I am home alone. Eggs are filled with protein and can be made in so many different ways. We prefer scrambled but tonight we made omelette’s. I like omelettes because I can add vegetables into them making it even healthier. We all eat our omelettes a different way but anyway it’s made it is easy, healthy and filling!
Our other favorite breakfast for dinner night is pancakes. Here is my families favorite protein packed favorite recipe:
6 egg whites
1 cup cottage cheese
1 cup rolled oats
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
Blend. Cook. Eat.
They are delicious!
